Frozen Fruit Salad
- 1 (32 oz.) pkg. Jell-O (mixed fruit, strawberry or lemon)
- dash of salt
- 1 c. boiling water
- 1 (8 3/4 oz.) can pineapple tidbits
- 1/4 c. lemon juice
- 1/3 c. mayonnaise or 2 c. sour cream
- 1 c. whipping cream
- 1 medium banana, diced
- 1/2 c. seeded grapes, halved
- 1/4 c. diced cherries
- 1/4 c. chopped nuts
- Dissolve Jell-O and salt in boiling water.
- Drain pineapple, measuring syrup (add water to make 1/2 cup).
- Stir in gelatin with lemon juice.
- Blend in mayonnaise and chill until thick.
- Whip cream and fold fruits, nuts and whipped cream into gelatin.
- Pour into 2 freezing trays.
- Freeze until firm, at least 3 to 4 hours. To serve, slice.
- Makes 8 servings.
