Blueberry Thyme Margarita

  1. * Note: Simple syrup is a basic bar mixture made out of equal parts water and equal parts sugar. You can purchase it or make your own. If you make it, bring one part water to a boil (in a pot on the stovetop or in the microwave) and then stir in the one part sugar until it's completely dissolved. Allow to cool before using.
  2. For the blueberry thyme puree:
  3. Place all of the puree ingredients (everything except the thyme) in a saucepan and bring to a simmer over medium-high heat until sugar is dissolved and berries start to burst (5-10 minutes). Remove from heat and add 2-3 sprigs of thyme. Steep the thyme in the mixture for 3 minutes and then remove the sprigs. Blend the mixture in a blender or food processor until smooth. Strain the mixture into a pitcher through a fine mesh strainer to remove any remaining berry skins. Refrigerate until ready to use.
  4. For the blueberry thyme margarita:
  5. Add the margarita ingredients into a cocktail shaker with some ice and shake vigorously until chilled. Serve over ice with a sprig of thyme for garnish.
