Blueberry Thyme Margarita
- FOR THE BLUEBERRY THYME PUREE:
- 12 ounces, weight Frozen Blueberries
- 1/2 cups Water
- 1/3 cups Sugar
- 1/3 cups Lemon Juice
- 2 sprigs Fresh Thyme Plus Extra For Garnishing The Drink If Desired
- FOR THE BLUEBERRY THYME MARGARITA:
- 2-1/2 ounces, fluid Blueberry Thyme Puree
- 2 ounces, fluid Tequila
- 1 ounce, fluid Lemon Juice
- 1 ounce, fluid Simple Syrup (store Bought Or Make Your Own---see Note)
- * Note: Simple syrup is a basic bar mixture made out of equal parts water and equal parts sugar. You can purchase it or make your own. If you make it, bring one part water to a boil (in a pot on the stovetop or in the microwave) and then stir in the one part sugar until it's completely dissolved. Allow to cool before using.
- For the blueberry thyme puree:
- Place all of the puree ingredients (everything except the thyme) in a saucepan and bring to a simmer over medium-high heat until sugar is dissolved and berries start to burst (5-10 minutes). Remove from heat and add 2-3 sprigs of thyme. Steep the thyme in the mixture for 3 minutes and then remove the sprigs. Blend the mixture in a blender or food processor until smooth. Strain the mixture into a pitcher through a fine mesh strainer to remove any remaining berry skins. Refrigerate until ready to use.
- For the blueberry thyme margarita:
- Add the margarita ingredients into a cocktail shaker with some ice and shake vigorously until chilled. Serve over ice with a sprig of thyme for garnish.
