Chicken Breasts Supreme
- 3/4 c. flour
- 2 1/2 tsp. salt
- 1 tsp. paprika
- 6 whole chicken breasts, boned and split in half
- 1/4 c. butter
- 1/4 c. water
- 2 tsp. cornstarch
- 1 1/2 c. half and half cream
- 1 Tbsp. lemon juice
- 1/2 tsp. ground ginger
- 1 tsp. lemon peel
- 2/3 c. chopped onion
- 1 c. grated Parmesan cheese
- Combine flour, salt and paprika.
- Coat chicken; brown in butter.
- Add water; simmer, covered, for 30 minutes.
- Save pan drippings.
- Arrange chicken in a 12 x 7 x 2-inch bake dish.
- Mix cornstarch with 1/4 cup half and half.
- Stir into pan drippings. Over low heat, stir in remaining half and half, lemon juice, onion, lemon peel and ginger.
- Cook until thickened; pour over chicken.
- Cover; bake for 35 minutes at 350u0b0.
- Sprinkle with cheese; return to oven until cheese melts.
- Serves 6.
