Pollo Con Salsiccia(Chicken With Sausage)

  1. Put olive oil in pan with first 3 ingredients; saut.
  2. Remove from heat.
  3. Add sausage and set aside.
  4. Coat chicken with flour and pepper.
  5. Brown in large pan and remove excess oil.
  6. Slowly add 4 cups of chicken broth and sausage mixture.
  7. Simmer until chicken and sausage are cooked.
  8. Add additional broth as needed.
  9. Season with ground peppercorns to taste.
  10. During last 5 to 10 minutes of cooking, add white wine and balsamic vinegar.
  11. Serve over pasta and sprinkle with Parmesan cheese.
