Candied Grapefruit Peel

  1. Cut grapefruit into large wedges and remove peel.
  2. Cut the peel into long strips about 1/4-inch wide.
  3. Put in a heavy saucepan and cover with boiling water.
  4. Cook at rolling boil for 10 minutes.
  5. Drain.
  6. Repeat this boiling process 3 times.
  7. Drain and set aside.
  8. In the same saucepan, combine 3 cups sugar and 2 cups water.
  9. Place over high heat and stir until sugar dissolves and mixture comes to a boil.
  10. Add the drained peels.
  11. Stir and reduce heat to a gentle boil.
  12. Cover partially, stirring occasionally, for an hour or until most liquid has been absorbed and peel is transparent.
  13. Remove from heat.
  14. Cover a large work area with wax paper.
  15. Pour a cup of remaining sugar on wax paper. Roll the candied peel in sugar.
  16. Shake off excess sugar and set on side to dry for 2 hours.
  17. Store in airtight containers or jars.
