Puerto Rican Coquito: A Feliz Navidad In A Glass
- 1 can (14 Oz. Can) Evaporated Milk
- 1 can (14 Oz. Can) Coconut Milk
- 1 can (10 Oz. Can) Condensed Milk
- 1 cup White Rum
- 2 whole Egg Yolks
- 1/4 teaspoons Cinnamon
- 1 pinch Salt
- 1 jar (10 Oz. Jar) Maraschino Cherries
- 1 pinch Nutmeg (for Garnish)
- 1. Put everything in the blender (except the cherries) and blend away. Pour liquid in a pitcher or bowl and set aside.
- 2. Puree the cherries on a blender or food processor and then pass through a sieve. What you want is the juice of the cherries. Mix the juice of the cherries with the coquito liquid and give it a good mix. You will see that the coquito now takes a light pink color.
- 3. Once everything is mixed, I then put it in a bottle and put it in the refrigerator.
- As you can tell by the ingredients in this beverage, this is a caloric-bomb, so it is not something we drink all the time. Luckily, fat-free or light versions of the products above are sold, which can cut the caloric intake. But it is the holidays and if you can't indulge a bit during this season, when can you?
