Masa Pancakes With Lemon Mascarpone And Honey

  1. In a large bowl mix together the masa harina, flour, baking soda, baking powder and salt. In a separate bowl whisk the eggs and then whisk in the vanilla, milk, buttermilk and melted butter. Combine the buttermilk mixture into the flour mixture and whisk until completely combined.
  2. In a separate bowl fold together the mascarpone cheese, lemon zest and lemon juice until combined then put the bowl into the refrigerator to chill.
  3. Heat a griddle or a large saute pan on medium heat with about 1 ounce of butter. When butter is melted pour a small amount of pancake batter onto the griddle with a ladle (cook as many as you can fit at one time, but make sure and leave space between) and cook until brown on both sides (2 to 4 minutes) and cooked throughout. Remove cooked pancake(s) from the griddle to a plate and cover with a sheet of foil to keep them warm. Repeat cooking the rest of the batter.
  4. Serve the pancakes with a small amount of the lemon mascarpone and drizzle on honey.
