Cocoa Banana Bread

  1. Preheat oven to 325u0b0.
  2. Grease and flour 6 mini and three 6 x 3 x 2-inch loaf pans.
  3. In a large bowl, at medium speed, beat sugar, oil and eggs until blended.
  4. In a medium bowl, stir together flour, cocoa powder, baking soda and salt.
  5. At low speed, beat flour mixture into egg mixture just until blended.
  6. Stir in chocolate chips.
  7. Fill mini pans 2/3 full and smaller pans 1/2 full.
  8. Place on baking sheet.
  9. Bake 25 to 30 minutes until a toothpick inserted in center comes out clean.
  10. Cool in pans on wire rack 10 minutes. Remove from pans and cool completely.
  11. Wrap in plastic wrap and then foil.
