Cocoa Banana Bread
- 2 1/2 c. flour
- 1/3 c. unsweetened cocoa
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 3/4 c. sugar
- 1/2 c. vegetable oil
- 3 large eggs
- 1 1/2 c. mashed ripe bananas (3 large)
- 1 c. mini chocolate chips
- Preheat oven to 325u0b0.
- Grease and flour 6 mini and three 6 x 3 x 2-inch loaf pans.
- In a large bowl, at medium speed, beat sugar, oil and eggs until blended.
- In a medium bowl, stir together flour, cocoa powder, baking soda and salt.
- At low speed, beat flour mixture into egg mixture just until blended.
- Stir in chocolate chips.
- Fill mini pans 2/3 full and smaller pans 1/2 full.
- Place on baking sheet.
- Bake 25 to 30 minutes until a toothpick inserted in center comes out clean.
- Cool in pans on wire rack 10 minutes. Remove from pans and cool completely.
- Wrap in plastic wrap and then foil.
