Cranberry Oatmeal Cookies With Yogurt Covered Raisins
- 1 cup Coconut Oil, Melted
- 1 cup Organic White Sugar
- 1 cup Brown Sugar
- 2 Eggs
- 1 Tablespoon Vanilla
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 3 cups Quick Cooking Oats
- 1/2 cups Yogurt Covered Raisins
- 1/2 cups Dried Cranberries
- 1/2 cups Walnut Pieces
- Preheat oven to 350 F.
- In a large bowl mix the coconut oil with the sugars. Add the eggs and the vanilla. Mix in the flour, baking soda and salt. Mix in the oats, then fold in the raisins, cranberries and walnuts.
- Drop spoonfuls onto a 12 by 12 inch baking sheet. Make sure the scoops of dough are at least an inch or two apart as these cookies will spread while baking.
- Bake at 350 F for 10 minutes.
