Crunchy Sweet Potato Pie Fries
- 4 whole Graham Cracker Sheets
- 1 whole Small/medium Sweet Potato
- 1 Tablespoon Canola Oil
- 1 teaspoon Apple Cider Vinegar
- 1/2 teaspoons Vanilla
- 1/2 Tablespoons Maple Syrup
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Allspice
- 1/4 teaspoons Ground Ginger
- 1/4 teaspoons Freshly Grated Nutmeg
- 1 dash Cayenne (optional Or To Taste)
- Preheat oven to 425F.
- Crush graham crackers into fine crumbs. Pour into a pie plate and set aside.
- Slice sweet potato into even sized strips.
- In a medium-sized bowl combine remaining ingredients.
- Toss potato strips into the spice mixture to coat.
- Dredge potatoes in graham cracker crumbs.
- Bake for 20 minutes. Turn fries. Bake for 5 minutes more.
