Crunchy Sweet Potato Pie Fries

  1. Preheat oven to 425F.
  2. Crush graham crackers into fine crumbs. Pour into a pie plate and set aside.
  3. Slice sweet potato into even sized strips.
  4. In a medium-sized bowl combine remaining ingredients.
  5. Toss potato strips into the spice mixture to coat.
  6. Dredge potatoes in graham cracker crumbs.
  7. Bake for 20 minutes. Turn fries. Bake for 5 minutes more.
