Baked Sweet Potato Oatmeal For One

  2. In a small mixing bowl, whisk together oats, sugar, cinnamon, nutmeg, baking powder, and salt.
  3. In a medium bowl, whisk together milk, sweet potato puree, egg white, and vanilla extract. Pour dry ingredients into wet and stir until combined. Spoon mixture into prepared bowl.
  4. Bake for 20 minutes, or until oatmeal is puffed and set.
  5. Serve warm with maple syrup and/or chopped pecans.
