Tasty Chicken Pie
- 4 chicken breasts
- 3 c. water
- 1 c. chopped celery
- 1/2 c. chopped onion
- 1 c. chopped carrots
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. buttermilk baking mix (I use Bisquick)
- 1/2 c. milk
- 1 stick oleo
- 1/2 c. garden peas
- Boil
- chicken
- in water until tender along with celery, onions,
- carrots, salt and pepper.
- Strain chicken and vegetables reserving broth.
- Bone chicken.
- Heat oven to 350u0b0.
- Melt oleo in 11
- x
- 13 x 2-inch dish; place chicken in.
- Add cooked vegetables and
- peas.
- Combine
- baking
- mix
- with milk and mix until smooth. Pour baking mix over top of chicken and vegetables.
- Pour
- chicken broth over all.
- Bake until golden brown about 35 minutes.
