Angel Hair With Broccoli

  1. Cut broccoli into florets.
  2. Peel and chop the stems into small pieces.
  3. Cook broccoli in
  4. boiling water for about 3 to 4 minutes until tender-crisp.
  5. Drain and place in cool water; drain.
  6. In saucepan, heat oil and 3 tablespoons butter over medium heat.
  7. In a large saute pan, melt remaining 1 tablespoon butter and saute scallions and garlic for 2 minutes. Add wine and cook for 5 minutes. Add melted butter and oil, then blanched broccoli.
  8. Heat thoroughly.
  9. Put angel hair in serving dish and toss with broccoli mixture.
  10. Sprinkle with grated cheese and serve at once.
