Multigrain Cinnamon Apple Waffles
- FOR THE WAFFLES:
- 1 cup Arrowhead Mills Multigrain Pancake Mix
- 1 whole Egg, Beaten
- 1 Tablespoon Honey
- 3/4 cups Fat Free Milk
- 1 Tablespoon Plain Nonfat Yogurt
- 1 Tablespoon Flax Seeds
- 2 teaspoons Vanilla Extract
- 1 pinch Salt
- 2 teaspoons Ground Cinnamon

- FOR THE TOPPING:
- 2 whole Apples, Cored And Sliced
- 1/4 cups Water
- 1/2 teaspoons Apple Pie Spice
- 1 teaspoon Cinnamon
- 1 teaspoon Stevia In The Raw
- 1/2 cups Walnuts, Toasted
- Preheat your waffle iron to high.
- In a bowl, mix together waffle ingredients. Pour batter into your heated waffle iron and cook according to your waffle iron instructions, probably around 2-3 minutes or until it reaches your desired crispness. Repeat with the remaining batter.
- Meanwhile, heat a small skillet over medium heat and add sliced apple and water. Let simmer 2-3 minutes, or until apples begin to get tender. Stir in remaining topping ingredients (except the walnuts) and let simmer for another 2-3 minutes, or until apples are completely tender. Remove from heat and set aside.
- Top waffles with apple mixture and sprinkle with toasted walnuts. Enjoy!
- *To toast walnuts, place in skillet over medium heat and cook until fragrant and nutty!
