Spinach Mandarin Orange Salad
- FOR THE SALAD:
- 2 bags Baby Spinach, 6 Ounce Bags
- 1 whole Red Onion, Thinly Sliced
- 2 cans Mandarin Oranges, Drained (11 Ounce Cans)
- Crumbled Bacon And Fresh Sliced Mushrooms (optional)

- FOR THE DRESSING:
- 3 Tablespoons Fresh Lemon Juice
- 2 Tablespoons Sugar
- 1 clove Garlic, Crushed
- 1 teaspoon Salt
- 1/2 cups Vegetable Oil
- For dressing, place lemon juice in jar with lid. Add sugar, garlic and salt. Shake until sugar is dissolved; add oil and shake again.
- Toss all salad ingredients together and pour dressing over salad just prior to serving.
- My family likes this with just the spinach, oranges and dressing. If you think you may have leftovers, dress the salad individually because it does not keep well with the dressing.
- We NEVER have any left!
