3-Minute Microwave Muffins
- 1/2 cups Plus 6 Tablespoons White Whole Wheat Flour
- 2-1/2 Tablespoons Sugar
- 1 dash Salt
- 1 teaspoon Baking Powder
- 1 whole Egg (or 1 Tablespoon Flax Seed Meal Mixed With 3 Tablespoons Water)
- 6 Tablespoons Vanilla Yogurt
- 2 Tablespoons Milk (whatever You Have On Hand)
- 2 Tablespoons Vegetable Oil
- 1 dash Vanilla
- 1/2 cups Any Mix-ins: Blueberries, Cranberries, Chocolate Chips, Etc
- 1 Tablespoon Brown Sugar, For Sprinkling
- In a small bowl, mix flour, sugar, salt and baking powder. Add egg (or flax egg substitute), yogurt, milk, oil and a dash of vanilla and mix until combined. If batter still seems a little thick, add a little more milk.
- Fold in mix-ins of your choice.
- Distribute batter evenly among mugs or small ramekins a little more than halfway to the top. Optional: sprinkle brown sugar over top before microwaving.
- Place in the microwave on high for 3 minutes.
