Mom’S Potato Salad
- 2 pounds Small Brown Potatoes Of Similar Size (choose A Variety That Holds Its Shape Well When Cooked)
- 1 whole Medium Yellow Onion, Diced
- 2 stalks Celery, Diced
- 1 cup Hellmann's Mayonnaise
- 1 Tablespoon French's Mustard
- 2 dashes Cayenne Pepper
- 2 dashes Each, Salt And Pepper
- 1 Tablespoon Paprika, For Garnish
- Wash the potatoes and put them in a large pot unpeeled. Cover them with water by at least an inch. Put the pot over a high flame and bring to a rapid boil. Boil around 6 minutes, or until you can insert a fork into the potatoes and they fall right off. Drain and allow the potatoes to cool completely in their skin.
- Once cooled, peel the potatoes and cut them into small cubes. Place them in a large bowl and mix with the remaining ingredients (except the paprika).
- Refrigerate until cold. Serve garnished with paprika powder.
