Mom’S Potato Salad

  1. Wash the potatoes and put them in a large pot unpeeled. Cover them with water by at least an inch. Put the pot over a high flame and bring to a rapid boil. Boil around 6 minutes, or until you can insert a fork into the potatoes and they fall right off. Drain and allow the potatoes to cool completely in their skin.
  2. Once cooled, peel the potatoes and cut them into small cubes. Place them in a large bowl and mix with the remaining ingredients (except the paprika).
  3. Refrigerate until cold. Serve garnished with paprika powder.
