Pork Fajitas Topping
- Boboli shell
- 2 tsp. olive oil
- 2 Tbsp. chopped scallions
- 2 cloves minced garlic
- 2 small assorted bell peppers (red, yellow and green), cut into 1/4-inch strips
- 1 lb. center cut pork chops, boned, trimmed of all fat and sliced into 1-inch strips
- 1/2 lb. mushrooms, sliced thin
- 1/2 c. dry wine
- 1/8 tsp. each: dry basil, parsley and fresh ground pepper
- 1/2 tsp. each: cumin, chili powder, oregano and red pepper seed
- 12 oz. jar Mexican style salsa or picante sauce
- 1/4 ??? each: fat-reduced shredded Cheddar and part-skim milk Mozzarella cheese
- 1 Tbsp. fat-reduced Parmesan cheese
- 1/8 tsp. each: dried basil and parsley
- fresh ground black pepper
- 1 Tbsp. olive oil
- Trim Boboli shell (see recipe).
- Place in a pizza pan.
- Set aside.
