Rhubarb Custard Bars
- FOR THE CRUST:
- 2 cups Flour
- 1/4 cups Sugar
- 1 cup Cold Margarine

- FOR THE FILLING:
- 2 cups Sugar
- 7 Tablespoons Flour
- 1 cup Whipping Cream
- 3 whole Eggs, Beaten
- 5 cups Rhubarb Pieces Diced

- FOR THE TOPPING:
- 6 ounces, weight Cream Cheese, Softened
- 1/2 cups Sugar
- 1/2 Tablespoons Vanilla
- 1 cup Whipping Cream, Whipped
- 1. Combine crust ingredients and press into a greased 9 x 13 pan. Bake at 350F for 10 minutes. Cool.
- 2. For filling: Combine sugar and flour. Stir in whipping cream and eggs, then stir in rhubarb. Pour over crust and bake at 350F for 45-60 minutes or until custard is set. Cool.
- 3.For topping: Blend cream cheese, sugar and vanilla. Fold in whipped cream. Spread over custard and refrigerate overnight.
