Apple Butterscotch Cookies
- 1 cup Softened Butter
- 1 cup Packed Brown Sugar
- 1/2 cups Granulated Sugar
- 2 whole Eggs
- 1-1/2 teaspoon Vanilla Extract
- 2 cups Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1 package Butterscotch Chips, 300 Gram Package
- 1 cup Dried Apple, Chopped
- Preheat oven to 375u0b0F. In a large bowl using a mixer with paddle attachment, cream softened butter, brown sugar and granulated sugar until fluffy. Beat in eggs and vanilla. Set aside.
- In a medium bowl, mix together flour, baking soda and salt. Gradually blend this into the creamed mixture. Stir in butterscotch chips and dried apple.
- Using a small spoon drop scoops of the dough onto un-greased cookie sheets, or if you prefer you can line the sheets with parchment paper or Silpat liners. Bake for 10 to 12 minutes or until golden brown.
