To-Die-For Pumpkin Bars
- FOR THE BASE:
- 1 box Yellow Cake Mix, 18 Ounce Box, Reserve 1 Cup For Topping
- 1 whole Egg
- 1/2 cups Butter, Melted
- FOR THE FILLING:
- 1 can (15 Oz Can) Libby's Pure Pumpkin
- 2 whole Eggs
- 2/3 cups Milk
- 1/2 cups Brown Sugar, Packed
- 3 teaspoons Cinnamon
- 1 teaspoon Vanilla
- FOR THE TOPPING:
- 1 cup Yellow Cake Mix (reserved)
- 1/2 cups Butter, Softened
- 3/4 cups Sugar
- 1. Preheat oven to 350 F.
- 2. In a large bowl mix base ingredients well and press into a 9x13 cake pan.
- 3. In a medium-sized bowl mix the filling ingredients well and pour over the base.
- 4. In a small bowl, thoroughly mix all of the topping ingredients, until it's crumbly. Sprinkle over the top of the middle layer.
- 5. Bake 50-60 minutes or until it is golden brown and the middle is set.
