Light Cream Of Broccoli Soup
- 1 (16 oz.) can ready to serve, low sodium, fat-free chicken broth
- 1/3 c. instant nonfat dry powdered milk
- 3 Tbsp. cornstarch
- 1/2 tsp. dried onion flakes
- 1/4 tsp. salt
- 1/4 tsp. dried basil
- 1/4 tsp. dried thyme
- 1/4 tsp. pepper
- 1 (10 oz.) frozen chopped broccoli, thawed and drained
- 1 1/2 c. skim milk
- 1/3 c. (1.3 oz.) shredded reduced fat Cheddar cheese
- 1 Tbsp. butter flavor granules
- garnish with shredded low-fat cheese
- Combine first 8 ingredients in large saucepan.
- Bring to a boil stirring constantly.
- Cook 1 minute, stirring constantly. Add broccoli and next 3 ingredients.
- Cook until cheese melts and mixture is thoroughly heated.
- Garnish each serve with 1/2 teaspoon shredded cheese.
- Makes 4 servings; 166 calories per cup; 3.1 grams of fat.
