Healthy Banana Bread

  1. Stir together flour, baking soda, cinnamon, baking powder, nutmeg and a dash of salt; set aside.
  2. In a mixing bowl, beat together egg whites, sugar and banana.
  3. Add oil and mix well. Stir flour mixture into banana mixture.
  4. Fold in currants and nuts.
  5. Spray an 8 x 4 x 2-inch pan with nonstick cooking spray. Pour batter into prepared pan.
  6. Bake at 350u0b0 for 55 to 60 minutes. Cool 10 minutes in the pan.
  7. Remove and cool on a wire rack.
