Healthy Banana Bread
- 1 1/2 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. baking powder
- 1/4 tsp. nutmeg
- 2 egg whites
- 1 c. sugar
- 1 c. mashed banana
- 1/4 c. oil
- 1/2 c. currants
- 1/2 c. nuts (optional)
- nonstick cooking spray
- Stir together flour, baking soda, cinnamon, baking powder, nutmeg and a dash of salt; set aside.
- In a mixing bowl, beat together egg whites, sugar and banana.
- Add oil and mix well. Stir flour mixture into banana mixture.
- Fold in currants and nuts.
- Spray an 8 x 4 x 2-inch pan with nonstick cooking spray. Pour batter into prepared pan.
- Bake at 350u0b0 for 55 to 60 minutes. Cool 10 minutes in the pan.
- Remove and cool on a wire rack.
