Cabbage And Ground Beef Casserole

  1. Cut up cabbage and boil until tender.
  2. Mash cabbage and measure 5 cups.
  3. Cook ground meat until brown.
  4. Add onions, bell peppers and seasonings.
  5. Stir.
  6. Add cabbage, Ro-Tel and mushroom soup and stir.
  7. Crumble Ritz crackers (all but about 5).
  8. Grate cheese and save 1/4 cup.
  9. Add cheese and crackers to ground meat mixture.
  10. Place in 2-quart casserole and bake at 350u0b0 for 1 hour. Remove from oven and sprinkle remaining cheese and crackers on top.
  11. Return to oven and bake about 10 minutes.
