Banana And Oat Bran Muffins
- 1-1/4 cup Flour
- 1/2 cups Oat Bran
- 1/3 cups Wheat Germ
- 1/2 teaspoons Salt
- 1-3/4 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 cups Sugar
- 1/2 cups Butter, At Room Temperature
- 1 Egg
- 1/2 cups Buttermilk
- 2 Ripe And Mashed Bananas
- 1 cup Chocolate Chips, Dates, Raisins, Etc.
- Preheat the oven to 375u0b0F. Line a muffin pan with paper tins.
- In a bowl, combine the flour, oat bran, wheat germ, salt, baking powder and baking soda. Set aside.
- In another bowl, cream the butter and the sugar. Mix in the egg, then stir in buttermilk and the mashed bananas. Mix well to combine.
- Incorporate the dry ingredients. Do not over mix the batter. Fold in the chocolate chips.
- Scoop the batter into the prepared muffin pan. Bake 20-25 minutes or until a toothpick inserted in the middle comes out clean.
