Rhubarb Cheesecake Bars
- FOR THE CRUST:
- 2 cups Butter, Softened
- 2 cups Oatmeal
- 1 cup Brown Sugar
- 2-1/2 cups Flour
- FOR THE FILLING:
- 16 ounces, weight Cream Cheese
- 1-1/2 cup Sugar
- 1 teaspoon Vanilla
- 3 cups Rhubarb, Diced
- Mix the butter, oatmeal, brown sugar, and flour together until the mixture is crumbly. Press 1/2 to 3/4 of the mixture into the bottom of a 9x13 greased pan. Mix cream cheese, sugar, and vanilla with an electric mixer until creamy. Stir in the diced rhubarb and spread over the crust. Top with remaining crust mix.
- Bake at 350u0b0F for 40-45 minutes.
- I like to keep them in the refrigerator after they have completely cooled.
- This recipe halves well. I halve everything and use a 9x9 pan and it turns out just as good!
