Rhubarb Cheesecake Bars

  1. Mix the butter, oatmeal, brown sugar, and flour together until the mixture is crumbly. Press 1/2 to 3/4 of the mixture into the bottom of a 9x13 greased pan. Mix cream cheese, sugar, and vanilla with an electric mixer until creamy. Stir in the diced rhubarb and spread over the crust. Top with remaining crust mix.
  2. Bake at 350u0b0F for 40-45 minutes.
  3. I like to keep them in the refrigerator after they have completely cooled.
  4. This recipe halves well. I halve everything and use a 9x9 pan and it turns out just as good!
