Easy Baked Chicken Kiev
- 8 chicken cutlets (1/4 inch thick)
- 1 c. Italian flavored bread crumbs
- 1 Tbsp. chopped fresh parsley
- 1/2 tsp. oregano
- 4 Tbsp. softened butter or margarine
- 4 oz. Monterey Jack cheese, cut into 8 strips, 1/2 inch thick and 1 1/2 inches long
- 5 Tbsp. butter or margarine, melted
- Stir together the 4 tablespoons softened butter of margarine with the parsley and oregano.
- Spread about 1/2 tablespoon of this mixture across each cutlet, about and inch from lower edge.
- Lay a strip of cheese over butter mixture.
- Fold lower edge of cutlet over filling, then fold up sides and roll up to enclose filling. (Use toothpicks to secure, if necessary.)
- Dip each bundle in melted butter, then roll in bread crumbs.
- Bake, uncovered, for 20 minutes or until chicken is no longer pink at 425u0b0.
