Flash Primavera
- 1 lb. mostaccioli, ziti or other medium pasta shape, uncooked
- 1 head broccoli or cauliflower, cut into small florets
- 1 Tbsp. cornstarch
- 1/4 c. water
- 1 (13 3/4 oz.) can low sodium chicken broth
- 3 cloves garlic, minced
- 1 (10 oz.) pkg. frozen mixed vegetables
- 1 (10 oz.) pkg. frozen chopped spinach, thawed
- Salt and pepper
- 1 c. grated parmesan cheese
- Prepare pasta according to package directions; 3 minutes before pasta is done, stir in broccoli. Drain pasta and vegetables; transfer to large bowl. Set aside and keep warm. Meanwhile, in small bowl, dissolve cornstarch in water; set aside. Simmer broth and garlic in large saucepan over medium heat 3 minutes. Whisk in cornstarch mixture. Stir in mixed vegetables and spinach; cook until hot, about 5 minutes. Toss sauce and vegetables with pasta. Season to taste with salt and pepper; sprinkle with parmesan cheese.
