Raspberry Swirl Brownies
- 2/3 c. (1 stick plus 3 Tbsp.) oleo or butter
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 c. chocolate chips
- 1 1/4 c. flour
- 1 c. oats, quick or old-fashioned
- 1 tsp. baking powder
- 1/4 tsp. salt (optional)
- 1/3 c. red raspberry preserves
- 1/3 c. chopped nuts (optional)
- Heat oven to 350u0b0.
- Lightly grease a 9 x 13-inch pan.
- Beat oleo, sugar, eggs and vanilla until smooth.
- Add 1 cup melted chocolate chips; mix well.
- Add combined dry ingredients; mix well. Spread batter into prepared pan.
- Place 16 teaspoons of preserves evenly on batter; with knife swirl into batter, distributing evenly.
- Sprinkle with nuts.
- Bake 25 to 30 minutes.
- Cool completely.
- Drizzle remaining 1/2 cup melted chocolate chips over brownies.
