Beef And Bean Chili
- 2 Tablespoons Olive Oil
- 1 whole Large Onion, Coarsely Chopped
- 2 cloves Garlic, Minced
- 2 Tablespoons Chili Powder
- 2 teaspoons Dried Oregano
- 1 teaspoon Ground Cumin
- 1/2 teaspoons Crushed Red Pepper Flakes
- 1/4 teaspoons Ground Cinnamon
- 1 pound Ground Beef
- 1 can Tomato Sauce (15 Oz Can)
- 1 cup Water
- 1 cup Cooked Kidney Beans
- 1 cup Cooked Black Beans
- 1 pinch Salt, Or To Taste
- 1/2 cups Shredded Cheese, your choice
- 1. In a large soup pot, heat olive oil over medium heat. Add onions and garlic and saute 5 minutes, or until onions are translucent.
- 2. Add chili powder, oregano, cumin, crushed red pepper, and cinnamon and cook 1 minute, stirring constantly to coat onion/garlic with spices.
- 3. Add ground beef and stir to brown the meat, approximately 3 minutes.
- 4. Add tomato sauce, water, and beans. Season with salt to taste and bring to a boil.
- 5. Reduce heat to a simmer, cover, and cook for 3o minutes stirring often, or until thickened and bubbly.
- 6. Sprinkle shredded cheese of your choice over the top to serve. I like mozzarella or pepper jack for a bit of heat.
