Grilled Guacamole Salad
- 1 whole Florida Avocado, Large
- 2 whole Vine Ripe Tomatoes, Sliced Thickly
- 1 bunch Baby Onions Or Spring Onions
- 1 whole Lime, Juiced
- 1 Tablespoon Red Wine Vinegar
- 2 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Honey, Preferably Orange Blossom
- 1 Tablespoon Fresh Cilantro, Chopped
- 1/4 teaspoons Sea Salt
- 1/4 teaspoons Fresh Ground Black Pepper
- Start by getting your grill nice and hot. Season the avocado, tomatoes and onions well with salt and pepper. Place the avocado on the hottest part of the grill and leave it alone for one full minute. Turn the avocado over and repeat for the other side, then move the slices to a cool spot on the grill and allow them to cook slowly while the other ingredients cook. Place the onions on the hot part of the grill and allow them to cook for 3 to 4 minutes, turning halfway through, then remove them. Next come the tomato slices. You want to only cook them long enough to get a char on the inner flesh and just slightly warm them-30 to 60 seconds per side is all it takes.
- Remove everything from the grill and arrange on a plate. Mix the lime juice, vinegar, olive oil, honey, and cilantro in a bowl to make the dressing and season with salt and pepper. Drizzle over the veggies and you're off and running. In our case, we're running back to the air conditioning.
