Ham And Cheese Crustless Quiche

  1. Preheat oven to 375.
  2. Mix eggs, cottage cheese, chiles, grated cheese, ham, onion, butter and hot sauce in large bowl.
  3. In a small bowl, mix flour, baking powder, and pepper. Stir into egg mixture.
  4. Pour into greased deep dish 9 inch pie pan. Sprinkle or grate Parmesan over the top.
  5. Bake about 35-37 minutes or until set and knife inserted in center comes out clean. (Loosely lay a piece of foil over the top if it's browning too much toward the end.)
  6. Let stand 10 minutes before cutting. Serve with additional Frank's Red Hot Sauce.
  7. *Notes: I have used all different kinds of cheeses...a mix of sharp and mild cheddar is good, or Mexican blend,or colby/jack, etc. Last night I made it w/Swiss cheese, ham, and green pepper. Yum! I've only made it w/ham but I think it would be good w/sausage or bacon, too.
