Almost Healthy Chocolate Zucchini Nut Muffins
- 3 whole Eggs
- 1 cup White Sugar
- 1/2 cups Dark Brown Sugar
- 1/3 cups Splenda Blend
- 1/2 cups Canola Oil (or Use 1/4 Cup Applesauce And 1/4 Cup Oil)
- 4 ounces, weight Softened Light Cream Cheese
- 1 teaspoon Vanilla
- 2 cups Shredded Zucchini
- 1 cup White Flour
- 1 cup Whole Wheat Flour
- 1/2 cups Ground Flaxseed
- 6 Tablespoons Unsweetened Cocoa Powder
- 1-1/4 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 teaspoon Cinnamon
- 3/4 cups Mini Chocolate Chips (dredge In Flour To Prevent Sinking)
- 1/2 cups Chopped Walnuts
- Preheat oven to 350.
- Mix eggs with sugars, add oil and cream cheese and combine thoroughly.
- Add vanilla and zucchini.
- Mix in dry ingredients completely then add chocolate chips and nuts.
- Fill muffin tins (paper lined) 3/4 full and bake 20-22 minutes. Option- bake in loaf pan for 50-55 minutes.
