Vegetable Chicken Stir-Fry
- 3 Tbsp. vegetable oil
- 4 skinless chicken breasts, sliced
- 2 c. celery, sliced
- 1 c. chopped onion
- 2 c. chopped broccoli
- 1 c. chopped red cabbage
- 1 c. grated carrot
- 2 c. sliced fresh mushrooms
- 1 c. chopped green pepper
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. nutmeg
- cooked rice
- Prepare all vegetables.
- Heat oil in wok or large frying pan on high.
- Add chicken and saute, stirring frequently.
- When chicken is lightly browned, add onion and celery.
- Saute, stirring frequently.
- Continue to add remaining vegetables, stirring frequently.
- When vegetables are almost done, add remaining ingredients.
- Reduce heat to medium-high, cover and continue to cook an additional 3 to 5 minutes, depending on degree of doneness desired.
- Serve immediately over rice with soy sauce.
