Lovely Little Chocolate Bundtlettes
- FOR THE BATTER:
- 1 box (18.25 Oz. Box) Devil's Food Cake (Betty Crocker Preferred)
- 1-1/3 cup Vegetable Oil
- 4 whole Eggs
- 1 box Instant Chocolate Pudding (small- 3.9 Oz)
- 1/2 cups Warm Water
- 1 cup Sour Cream
- 1 cup Chocolate Chips
- _____
- FOR THE FROSTING:
- 2/3 cups Softened Butter
- 6 cups Powdered Sugar
- 3 teaspoons Vanilla Extract
- 4 Tablespoons Milk
- Mix all batter ingredients together, adding the chocolate chips last. Batter will be pudding-like. Pour evenly into greased bundtlette pans. I vastly prefer Pam for Baking to ensure they come out clean and easy every time. Bake at 350F for 17- 18 minutes or until a cake tester comes out clean. Recipe will make 12 mini bundt cakes. (Bake for 45- 50 minutes for a regular bundt cake.)
- Cool completely before frosting.
- Mix frosting ingredients until smooth. Add food coloring as desired. Place in a pastry bag with a large round decorator tip and pipe in loops around the bundtlettes.
