Curried Turkey And Broccoli
- 3 Tbsp. margarine
- 1 small onion, chopped (1/4 c.)
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 tsp. curry powder
- 1 c. turkey broth or chicken broth (can be canned)
- 1 c. light cream or whole milk
- 1 tsp. tomato paste or ketchup
- 2 (10 oz.) pkg. frozen broccoli spears, thawed and partially cooked
- 12 pieces, cooked turkey (1 lb.)
- 1/4 c. sliced unblanched almonds
- Melt butter in medium saucepan.
- Saute onion just until soft. Stir in flour, salt, pepper and curry powder.
- Heat for 1 minute. Stir in
- broth and cream.
- Cook, stirring constantly,
- for 5 minutes.
- Add
- tomato
- paste
- and
- cook
- 3
- minutes longer.
- Pour half of sauce into
- a
- 13
- x 9-inch baking dish. Arrange
- broccoli along
- sides.
- Overlap
- turkey
- slices
- down through middle.
- Pour remaining
- sauce over turkey.
- Sprinkle with almonds.
- Bake in a moderate oven at 350u0b0 for 20 minutes. Makes 6 servings.
