Fried Rice

  1. Chop the mushrooms, scallions, pineapple, and matchstick the carrots.
  2. On medium heat warm up sesame oil, saute garlic, ginger and scallions for 1 minute until fragrant. Add mushrooms cook for 2 more minutes until slightly softened. Add rice, raisins, pineapple, carrots, edamame and 1 Tablespoon of soy sauce. Cook for about 5 minutes or until the vegetables become soft and the rice starts sticking to the pan.
