Mediterranean Tuna Salad
- 4 cans Albacore Tuna, Drained, 6 Oz
- 1 can Artichoke Hearts, Quartered And Drained, 14 Oz
- 1 jar Diced Pimentos Or 1/2 Cup Chopped Roasted Red Pepper, 4 Oz
- 1 cup Calamata Olives, Sliced
- 1/2 whole Red Onion, Minced
- 1/4 cups Cilantro Or Parsley, Minced
- 1/4 cups Basil, Minced
- 2 whole Garlic Clove, Minced (1 Teaspoon)
- 1 teaspoon Italian Herbs Spice
- 1 cup Mayonnaise
- 3 Tablespoons Lemon Juice, Fresh
- In a large bowl combine tuna, artichoke hearts, roasted red pepper, olives, onion, cilantro/parsley, basil, garlic, Italian spices, mayonnaise, and lemon juice. Mix well. Serve over a bed of lettuce or on favorite Italian bread.
- To serve on bread: fill the bread with tuna and press a plate on top of the sandwich, topping with a heavy can. This way the dressing will seep into the bread. Wait 30 minutes then slice and serve.
