Green Tomato Pie
- 1 (9-inch) double pie crust
- 1 1/2 lb. green tomatoes (3 1/2 c., sliced)
- 1 1/2 tsp. grated lemon rind
- 1/2 tsp. lemon juice
- 1 Tbsp. cider vinegar
- 1/2 tsp. salt
- 1 1/3 to 1 1/2 c. sugar
- 1 c. raisins
- 3 Tbsp. flour
- 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1 Tbsp. bread crumbs
- 2 Tbsp. butter or margarine
- Wash tomatoes; cut into quarters and slice very thin.
- Stir in raisins, lemon juice, rind, vinegar and salt.
- Blend flour with sugar and spices.
- Sprinkle crumbs evenly over bottom of pastry lined pan.
- Add 2 tablespoons of sugar mixture.
- Fold rest of sugar mixture into tomatoes and flour in pan.
- Dot with butter. Cover with top crust.
- Bake for 15 minutes at 425u0b0.
- Reduce heat to 325u0b0 and bake 50 minutes longer.
