Very Fast Fruitcake
- 1 pkg. (2 layer size) spice cake mix
- 1 (3 3/4 or 3 5/8 oz.) pkg. instant lemon pudding mix
- 2/3 c. apricot nectar
- 1/4 c. apricot brandy
- 1/2 c. cooking oil
- 4 eggs
- 1 c. (5 oz.) raisins
- 1 c. (8 oz.) candied pineapple
- 1 c. (4 oz.) chopped walnuts
- 1 c. sifted powdered sugar
- 2 to 3 Tbsp. apricot brandy
- In large mixer bowl, combine cake mix, pudding mix, apricot nectar, 1/4 cup apricot brandy and oil.
- Beat on medium speed of electric mixer for 2 minutes or until mixture is smooth.
- Add eggs, one at a time, beating well after each.
- Fold in fruits and nuts.
- Turn into well-greased and floured 10-inch tube pan.
- Bake in a 350u0b0 oven for 50 to 55 minutes or until cake tests done. Cool 15 minutes in pan.
