Oatmeal Chocolate Chip Bars
- 1 1/2 c. firmly packed brown sugar
- 1 c. shortening
- 2 Tbsp. molasses
- 2 tsp. vanilla
- 2 eggs
- 3 c. quick-cooking rolled oats
- 1 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 (12 oz.) pkg. chocolate chips
- 3/4 c. chopped nuts (optional)
- 1 pkg. Reese's peanut butter chips (optional)
- Preheat oven to 350u0b0; grease a 10 x 15 or 9 x 13-inch pan. In a large bowl, beat brown sugar and shortening until light and fluffy.
- Add molasses, vanilla and eggs; blend well.
- Lightly spoon flour into measuring cup and level off.
- Stir in oats, flour, baking soda and salt; blend well.
- Stir in chocolate chips (and, if desired, peanut butter chips and chopped nuts).
- Spread in pan and bake at 350u0b0 for 20 to 25 minutes (until light golden brown).
- Cool slightly and cut into bars.
