Vegetable Pizza With Oat Bran Crust
- 1 c. Quaker oat bran hot cereal, uncooked
- 1 c. flour
- 1 tsp. baking powder
- 3/4 c. skim milk
- 3 Tbsp. vegetable oil
- 1 Tbsp. Quaker oat bran cereal, uncooked
- 1 c. (8 oz.) tomato sauce
- 1/2 tsp. oregano or Italian seasoning
- 1 c. sliced mushrooms
- 1 medium green or yellow pepper, cut into rings
- 1/2 c. chopped onions
- 1 1/4 c. shredded Mozzarella cheese
- Combine 1 cup oat bran, flour and baking powder.
- Add milk and oil and mix well.
- Let stand 10 minutes.
- Heat oven to 425u0b0. Lightly spray round pizza pan with vegetable oil cooking spray or oil lightly.
- Sprinkle with 1 tablespoon oat bran.
- With lightly oiled fingers, pat dough out evenly.
- Shape edges to form rim. Bake 18 to 20 minutes.
- Spread sauce evenly over partially baked crust.
- Top with vegetables.
- Sprinkle with cheese and oregano. Bake an additional 12 to 15 minutes or until golden brown.
- Cut into wedges.
