Tzatziki Sauce

  1. Peel the cucumber and cut in half lengthwise. Using a spoon, remove the seeds. Grate the remaining cucumber flesh.
  2. Place the grated cucumber in a tea towel or on two layers of paper towel. Gently squeeze out the cucumber juice and discard.
  3. Mix the drained grated cucumber with the yogurt. Add remaining ingredients and stir to combine.
  4. Cover with plastic wrap and refrigerate overnight.
  5. Taste for seasonings adjustments. You may need an extra pinch of salt or sugar. Stir. Serve with my Lamb and Beef Gyro recipe (also available on Tasty Kitchen).
