Glazed Meat Loaf
- 1 lb. ground turkey breast meat
- 1/2 c. fat-free crackers, processed to fine crumbs, or fat- free bread crumbs
- 1 c. cooked brown rice
- 1/2 c. chopped onion
- 1/4 c. grated carrots
- 1/4 c. finely chopped celery
- 1 1/2 tsp. prepared mustard (spicy or Dijon)
- 1 tsp. garlic powder
- 1/2 tsp. ground thyme
- 1/2 tsp. onion powder
- 1/8 tsp. white pepper (optional)
- 1/4 c. no-salt tomato sauce
- 2 egg whites
- 6 Tbsp. no-salt ketchup
- 2 Tbsp. honey
- Preheat oven to 350u0b0.
- Combine all ingredients, except ketchup and honey and mix well.
- Turn mixture into a 7 or 8-inch loaf pan. Bake at 350u0b0 for 40 minutes, until firm and brown on top. Combine ketchup and honey.
- Spread evenly over top of loaf and bake 5 minutes longer.
- If desired, serve with no-salt ketchup.
- Yields 6 servings.
