Mocha Fudge Pudding Cake
- 1/4 cups Butter, Melted
- 2 teaspoons Vanilla
- 1/2 cups Half-and-half
- 1 cup Sifted Cake Flour
- 2 teaspoons Baking Powder
- 1 cup Sugar, Divided
- Pinch Of Salt
- 1/2 cups Dutch Processed Cocoa Powder, Divided
- 1 cup Chocolate Chips
- 3/4 cups Packed Brown Sugar
- 1-3/4 cup Strong Hot Coffee
- Preheat your oven to 400u0b0F. Butter and flour a 9" square cake pan.
- In a small bowl, stir together the melted butter, vanilla and half-and-half; set aside.
- In a large bowl, whisk together the cake flour, baking powder, 3/4 cup sugar, salt and 1/4 cup cocoa. Stir in the chocolate chips, and pour the batter into your prepared baking pan.
- In another small bowl, stir together the brown sugar, remaining 1/4 cup sugar, and remaining 1/4 cup cocoa. Sprinkle over the cake batter.
- Pour the hot coffee over the batter/sugar and bake for 20-25 minutes, until the top of the cake is set (toothpick inserted just into the top 1/2 inch of the cake comes out clean) and the bottom is bubbling.
- Serve warm with a scoop of ice cream! (Although it does taste almost as good the next day!)
