Spicy Vegetable Chili
- 5 Tbsp. light olive oil
- 2 chopped medium onions
- 3 cloves minced garlic
- 2 medium zucchini, diced
- 2 diced red bell peppers
- 1 to 2 minced jalapeno peppers
- 1 (28 oz.) can Italian plum tomatoes
- 5 large fresh plum tomatoes, diced
- 1/2 c. dry red wine
- 2 Tbsp. chili powder
- 1 Tbsp. cumin
- 2 tsp. oregano
- 1 can kidney beans
- 1 can black olives
- juice of 1 large lemon
- chopped fresh cilantro on top
- Heat oil.
- Add onions and garlic.
- Add zucchini, red pepper and jalapenos and cook for 5 minutes.
- Add all other ingredients. Add salt and pepper to taste.
- Simmer.
- Serve with grated Jack cheese and cilantro.
