Spicy Vegetable Chili

  1. Heat oil.
  2. Add onions and garlic.
  3. Add zucchini, red pepper and jalapenos and cook for 5 minutes.
  4. Add all other ingredients. Add salt and pepper to taste.
  5. Simmer.
  6. Serve with grated Jack cheese and cilantro.
