Pancetta Tomato Bibb Lettuce With Homemade Blue Cheese Dressing
- 1 head Bibb Or Butterhead Lettuce
- 6 slices Pancetta Rounds Or Pieces Of Bacon
- 1 Tablespoon Pancetta Drippings
- 8 whole Plum Tomatoes, Halved
- 1-1/2 cup Sour Cream
- 3 Tablespoons Milk
- 2 Tablespoons Apple Cider Vinegar
- 1 whole Green Onion, Chopped Fine
- 1 cup Crumbled Blue Cheese
- 1/4 cups Milk To Thin Dressing If Needed
- Pan fry pancetta over medium heat until crisp. Crumble up pancetta. Slice tomatoes. Place several leaves of lettuce on luncheon plates. Mix remaining ingredients together well, mashing blue cheese into the dressing slightly to release flavor. Use the last 1/4 cup of milk to thin dressing to preference. Spoon dressing over leaves. Scatter tomatoes and pancetta crumbles over dressing. Enjoy!
