Peanut Butter-Chocolate Pound Cake
- 3 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 6 Tbsp. stick butter or margarine (at room temperature)
- 1 1/3 c. creamy peanut butter
- 1 c. tightly packed light brown sugar
- 2 large eggs
- 1 1/4 c. buttermilk
- 1 tsp. vanilla extract
- 2 c. (12 oz.) semi-sweet chocolate chips (mini if available)
- Heat oven to 350u0b0.
- Lightly grease 4 (3 1/2 cup) mini loaf pans.
- Mix dry ingredients (except chips).
- Beat butter, peanut butter and sugar until pale and fluffy.
- Beat in eggs, one at a time, until blended.
- Beat in buttermilk and vanilla.
- Gradually add flour mixture until just blended; stir in chocolate chips.
