Chocolate-Pomegranate Mousse

  1. Pour the 2 tablespoons cold water into a small bowl. Pour in the gelatin. Meanwhile, bring 1/4 cup water to a boil. Pour it into the bowl and stir to dissolve the gelatin completely.
  2. In a medium bowl, whisk together the cocoa powder and sugar. Pour in the whipping cream. Beat on medium speed until stiff peaks form. Pour in the gelatin mixture and pomegranate juice and beat until well-blended.
  3. Spoon into dessert dishes and refrigerate at least 30 minutes before serving. Serve with whipped cream, pomegranate seeds, and pomegranate syrup for garnish.
