Banana Coconut Bread With Stevia
- 3 whole Large Mashed Bananas
- 1/2 cups Coconut Cream (or Coconut Milk)
- 2 whole Eggs
- 2 teaspoons Vanilla Extract
- 1 cup Baking Stevia (or Sugar)
- 2 cups All-purpose Flour
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1/2 cups Shredded Sweetened Coconut
- 1. Preheat oven to 350 degrees. Spray a loaf pan with nonstick spray, or grease lightly.
- 2. Mash up bananas in a large bowl. Add coconut cream (or coconut milk) and eggs. Whisk well to combine. Add vanilla extract and combine.
- 3. Sift Stevia, flour, baking powder, baking soda and salt together. Add to the mixing bowl. Whisk together until just combined. Add shredded coconut and whisk to combine.
- 4. Pour batter into the loaf pan and bake for 50-60 minutes, or until bread is brown and passes the toothpick test.
